More Canning

Last weekend, Deb and I canned six quarts of applesauce.  We are already using some of it, so the picture is not complete!

This weekend, our goal was salsa, corn cob jelly (just like honey), and apple pie filling.

I have to say, we did pretty good!  I made two quarts of salsa and we made five pints of corn job jelly and eight quarts of apple pie filling!

The cold room is filling up!  I don't know what's next!  But I'm thinking about marinated eggplant!

CSA Week 14

Here is our share for this week!

Full Share

sweet corn
2 lbs of tomatoes
1 pint of grape tomatoes
2 lbs of cucumbers
2 bunches of carrots
2 bunches of radishes
4 sweet peppers
2 hot peppers
2 larger eggplants and a handfull of small ones
1 head of garlic
1 melon (cantaloupe or seedless watermelon)
1 bunch of kale

They are offering a FALL share this year and I think I am going to take advantage of it!

My plan is to make more salsa this weekend and also some corn cob jelly.   I have been frying up the  eggplant weekly and freezing it.  Whenever I want to make eggplant parmesan, it will be ready!  With my daughter coming home in three weeks, I need to get prepared.  She has a list of things she wants when she gets home!

Yankee - Red Sox Game

We drove up to Boston this week to go to dinner and then take in the Yankees-Red Sox game at Fenway Park with some friends.  We go up once a year to see the Yankees play because hubby refuses to step inside the new Yankee Stadium.  We have a great time every time we go - it was cool and the perfect evening for a game!

And the Yankees won!!!

Apple picking with the trips

This was our fourth year in a row to take the triplets apple pickings - what a good time!  (hubby actually came this year!)

Honeycrisps and Gala apples.  They were expensive this year.  I'm embarrassed to tell you how much we spent on apples.

But they were so good.  We have a lot left and I'll get to canning them this weekend.  But so far, I've made six quarts.  I've already given some away and we have eaten it too.  Honeycrisps make an extremely sweet applesauce.  No sugar needed or added and yet it tasted  like we added a cup or two!

Chicken of the woods

My brother went foraging again.  I got more Chicken of the woods mushrooms.

I fried them up with onions and will freeze them to have with steak!

THEY TASTE JUST LIKE CHICKEN - NO LIE!!!!

Salsa

We have been eating a lot of salsa this summer.  I also gave away a few pints.  And that left me with one quart and one half pint to get through the fall/winter.  That isn't going to work!

So, today I made one pint and three half pints.  It is my best batch yet!  I used four tomatoes, five peppers, one onion, some garlic and other spices.

I am going to try to make it in small batches each week for a few weeks to get through the fall/winter.
