1/2 Pig and Chili recipe

I bought a 1/2 pig this week.  This is our second one!  The first one was wonderful and it lasted a while, so we thought we would order another.  This 1/2 pig was 130 lbs.!

Two hams, two pork roasts, lots of bacon, sausage (never enough for me), spare ribs, hocks, pigs feet, back fat (for salt pork), ham steaks, pork chops and other cuts that I can't remember! 

I make a sausage chili in the crock pot that is so easy!

Ingredients:

4 lbs. sausage (not links)
1 jar of salsa (I use homemade)
1 large can diced tomatoes (or crushed if that is all you have)
1 large onion, chopped
3 tbsp. garlic minced
two cans of beans drained (whatever type you have - I use kidney beans)
chili powder to taste
cumin to taste
whatever spices you like!

Method:

Brown the sausage on the stove top (this is the only real work)
Place sausage into crock pot
Add the rest of the ingredients and cook on low for 4-5 hours

Dinner is served!!

So good! and I like it a little better than using ground beef!

Where did 2 weeks go?

I think I broke my New Year's resolution of trying to blog daily!

Let's see what happened in the last 2-1/2 weeks!

 - Had Hubby's 50th birthday party!  We had 42 people at my mom's house and it was a great party.  The food was great, the guests were great and we all had fun!

 - Hubby had surgery - that is the most important development!  Life got crazy getting through that!

 - Took some time off to take care of hubby after surgery!

 - Hubby ended up in ER with stomach issues.  All is well now! 

 - Finished all my EOY jobs for all clients! Whew!

 - Finished my taxes and did the FAFSA for my daughter!

 - Booked my daughter's flight for spring break - she is getting a ride home and then flying back to NC.

 - Happy Belated Valentine's Day to all - we didn't really celebrate as it was the day after the surgery!

 - Snow, snow and more snow!  19 storms to date this winter here in CT!  We are all pretty tired of it!

I  have come to the personal realization for the reason that I went into the business field and did not follow in my mom's footsteps (she is a nurse)!  I am not a patient caregiver!  I admit to it!  I do my best, but I'm just not good at it!   I'll keep trying as we will deal with hubby's rotator cuff for another few months, but honestly, I can admit it!!   I have no patience!  God Bless my husband for putting up with me!

Now that life has calmed down somewhat, I will try to blog more!

Let it snow?

On Monday, we received almost 7 inches of the nice white stuff!  It was great snow for making a snow man or for sledding.  I went out four times and it wasn't that bad to shovel, either! 

Today, we are supposed to get 6-10 more inches!  We are supposed to get ice with it also, so not the best type of snow.  And I'm not going to even think about what we are getting this coming Sunday! 

Honestly, I am done with winter....but Winter isn't done with us yet!  

So....I decided to make the best of it and make Snow Pancakes!  Recipe is in the Farming on Faith blog:

I made them this morning!  And they were very good!  The  recipe made enough for about four people.  These are the leftovers!

Happy Birthday, Christine

As most of you know, last year was most of my friend's BIG 50 year.  The last of us turned 50 in December and we celebrated Christine last week.  A little late, but better late than never!

We went out to CRAVE for a fantastic dinner and then to Cindy's for cake and coffee and lots of laughs!

Happy Birthday Christine!  We are so glad you enjoyed it.





Our next adventure with the girls is "Fiddler on the Roof" next weekend!   I can't wait to see it!

MSG

With Superbowl weekend in full swing here in the NYC area, my sons were able to score tickets to the Knicks/Heat game on Saturday night.  They had the most amazing seats and saw celebrity after celebrity.  They had a lot of fun and enjoyed the game (and Times Square) immensely!  Here are some of their photos.

 These are my boys with Trent Dilfer?  I believe he was a Seahawk?  Someone can correct me!

Happy Superbowl Sunday!

I really don't have a favorite team of the two that are playing, but I always root for the underdog......so,

GO SEAHAWKS!

We don't have any plans, so I'm going to make pulled pork and cole slaw sliders and lots of pick-on food!  

Maybe, next year STEELERS!

Happy Groundhog Day!

Last year at this time, I was having one of the best weekends I have ever had!

I'll be thinking about the Groundhog all day and all the things that Punxsutawney, PA does for its favorite resident!   See my posts here and here and here if you are interested in the happenings of Groundhog Day.  I recommend that everyone goes at least once in their life!!

Special Friends!

Yesterday, I was invited by one of the trips (Cassidy) for a special friends luncheon held at their school.  All of the trips got to invite a special friend (Brody invited two!)

The Special Friend brings in lunch for the student and sits in the all-purpose with them and gets to talk and eat and hang out!  When my kids were in the school, we also got to visit the classroom and see their work and their desk, etc. 

The secretary took a picture of our table.  My brother and my sister and my nephew, Thomas shared the meal with the three trips!
