How many of us have our degrees and can't answer half of these questions (as I raise my hand sheepishly)?
How many of our grandparents or parents only went to school to the 8th grade??

I felt pretty dumb after this test......

Tell me how you did?

Yesterday, we received three more inches of snow....but after this winter, three inches is nothing we can't handle!   But the cold temperatures and the howling wind are back and I had to bring in my hens last night - it was 7 degrees.  I will have to bring them in again tonight too!  I was started to get used to those balmy 25 degree nights and 45 degree days!  Oh well...It is only February 22nd, I can't expect spring yet!

However, I was talking to some ladies last night at my class and they can already see the buds of flowers coming up through the dirt at their homes.   At my house, the snow is still totally covering my flower bed so all I see is dirty snow!

The Past Week

My cold started last Tuesday night.  By Wednesday morning, I could not make it out of bed.  However, I got up to take care of the hens and then emailed my boss that I was not coming in.  (It was only the second time in two years that I missed work.)  I slept until 11:45...I guess I needed it, huh?!  Got up, had a bowl of soup and slept until 2:45!
I made my meeting that night, but I was exhausted and in bed by 9:30.  Got eight hours of sleep!

Thursday...worked all day, taught Zumba and then babysat Nonni...She is too darn funny.  She had everyone laughing this week.  She says the darndest things.

Friday...work all day and did a Zumba Master class - I was in bed again by 9:30.  My body is loving the rest!

Saturday...taught Zumba, came home showered and drove to Seton Hall in NJ.  My daughter is doing the "college tours" now and this was our third to date.  She liked it a lot (and so did I).  Came home and went out to visit with Eva (my girlfriend from Saratoga).  She doesn't get back to CT too much, so when she comes home, I make sure to spend some time with her!  In bed by 10:30.

Sunday...Church and then a Zumba Jammer session - learned six new songs, met some fun people and had a wonderful experience.  Came home to dinner with hubby and family, took a soak in the hot tub (I have had enough Zumba!) and then lounged on the couch and played on the computer.

My cold is MUCH better.  I caught up on a lot of sleep and now I am back on track.

The Amazing Race started last night too.....one of the only shows that I really watch and enjoy!

I hope you had a much calmer week!

Have a good weekend.

Beet Cake Recipe

I have owed you this recipe.  See pictures here.  This recipe is really quite easy.

1/2 Cup Sugar
3 Eggs
3/4 tsp. baking soda
1/4 tsp. Baking powder
1/2 tsp. vanilla (I always use a full teaspoon of vanilla)
1-1/2 cups oil - I used Olive oil
2 Cups of Flour
3 Tbsp. of cocoa
1/4 tsp. salt
1-1/2 cups of pureed beets (I used two cups  because that was what I had).

Mix together sugar, oil, and eggs.  Sift together the dry ingredients, then fold into the other mixture.  Add vanilla and beets and blend well.  I am sure you can put nuts in if you want too!  Pour into a greased and floured 9 x 13 pyrex baking dish.  Bake at 350 degrees for 35 minutes or until done.

I used a regular chocolate frosting that I had found on line.  Nothing fancy, just cocoa, confectioners sugar, butter and milk.  I don't remember exactly.

But it was really good!

Freebies Website

For about four or five months, I have belonged to a Freebies website called Allyou.com

I have to say that I get some great things.  Shampoo, conditioner, makeup, dog food, cat food, bayer aspirin, Soup, soap, coffee, tea, toothpaste, dental floss, teeth whitener, face scrubs, baby wipes, Depends, baby diapers, feminine pads and tampons, Starbucks gift cards (2- $5.00 gift cards to date...for free) and the list goes on and on...

I filled up the kids stockings at Christmas with free stuff (a little crazy, but it was good stuff!).

My family is quite amazed.  Yesterday, I received four free samples: a dog food sample ( I don't own a dog, but the feral cats are happy!), soup packets, teeth whitener, and conditioner for your hair.  Almost every day, I receive something.  I belong to two other freebie sites too, so I check them all each day and sign up for freebies.

If you have some free time, check it out.  Click on Daily Samples.

A few of the deals need you to be signed up for Facebook.  So, I have missed out on a few opportunities.  I may have to re-join facebook to get more free stuff....I'm thinking about it.  I missed out on free Coffeemate, free hair color and a free power bar in the last week just because I am not on Facebook.

Five Things

Nancy from a Rural Journal has tagged me to write about five things that I can't leave home without.   Please visit Nancy on her blog and check out her gorgeous photography.....(Mark- check out the photos and the German Shepherds...they are beautiful animals!).

So, the five things, I can't leave home without:

1. My pocketbook....Unfortunately, this is a catch all for everything I have and need. And in this pocketbook are three of the other four items.

2. My keys...I'm not going anywhere without them!

3. Money...I was one of the those people who went everywhere without a dime on them and if I needed anything, I would put it on a credit card.  Now I carry cash, and I don't spend as much! (Thank you, Dave Ramsey)

4.  I can't leave home without locking the door and putting on the alarm...I'm married to a cop - I don't have a choice :)

5. Although I don't want to say the last one, I have to, because it is a necessity....my phone!

Now it is my turn to tag some bloggers.  Participation is optional.  But check out these fellow bloggers and you will enjoy their take on life!

Saturday

We cancelled Zumba because the weathermen said it was going to be bad weather (wintry mix with ice)....Guess what, the weather was fine...we could have had class....And Supposedly, today is National Weatherman Day!!  They SHOULD NOT have their own day!  They SHOULD NOT.....

Anyway, I got to babysit one of the trips because my sister needed to do some errands.  I was supposed to go get raffle prizes for SHA, but that got cancelled too!

So, I cooked, cleaned and organized.  The spice cabinet is very happy today!

Tonight, a party for my very good friend.....Happy Birthday, you know who you are and I know you hate this time of year........But enjoy it anyway!  Edited to add.....I hope you had a nice pause....LOL...

And the good news is.....

We booked our trip a few days ago and we are going back to Naples, Florida in April......I so need the reprieve.

Wednesday, February 2, 2011

It wasn't too bad...

Two inches of snow yesterday.

Two inches of ice today.

Me and the kids got the snow all shoveled last night, but the ice took all morning today.  We needed a LOT of salt to melt it, but I was able to come into work for 1:15.

The beet cake came out great...This is the beet puree (not too appetizing looking is it?)
The batter - nice and red!
Ready to be baked!
I made chocolate frosting and as you can see my son had the first piece! It tastes like chocolate...Although Dominic said you can taste that something is different, but you can't put your finger on it!
Looks just like Chocolate Cake!

And finally some good news on the weather front....

Punxsutawney Phil predicts an early spring

( I don't believe it!)

Happy Groundhog Day........(one of my favorite movies too!)

I am not going to talk about this weather......

.....but, darn it all, that is what life is based on right now here in CT....

Snow and freezing rain as I type this here at work.   It is not fun.

I am cancelling Zumba again tonight and will probably have to cancel again tomorrow night.

On a lighter note, I am making my Beet Cake this evening.  It sounds 'not so good', but really, it is very GOOD!

I plan on posting the recipe tomorrow (when I'm home from work again........because of more snow and ice)...you see what I mean!!
