Halfway through with the CSA for this year....wow, time flies.
6 ears of sweet corn
3 lbs of yellow squash and zucchini
2 lbs of cucumbers (slicing and kirby)
8 large tomatoes
1 pint yellow grape tomatoes
3 large eggplant & 6 asian eggplant
2 lbs of red potatoes
4 sweet peppers & 4 hot peppers
1 lb purslane
I see salsa on the horizon!!! Last year's batch came out so good and I have run out of it! So, that will be my next canning project!
